BRZE MEKIKE SUPLJIKAVE I POSNE

Ivanin proveren recept
Mekike najcesce pravim na ovaj nacin, jer uglavnom sam u zurbi, a inace su premekane i preukusne. Iznutra supljikave a spolja blago hrskave i rumene. Ukus i miris me podsecaju na skolu i velike odmore. Tada smo  svaki dan kupovali predivne velike mekike,obilno prelivene kecapom.

POTREBNO:
- 500 ml mlake vode
- 700 gr mekog brasna
- 40 gr kvasca (1 pakovanje ili kockica)
- 1 kafena kasikica secera
- 5 kasike ulja za testo
- 1,5 kafena kasikica soli
- ulje za przenje(duboko przenje)


PRIPREMA:

Evo kako meni budu gotove jako brzo. Kvasac ne stavljam da narasta, narastu isuvise dobro da bi gubila vreme na tome.
U vanglu stavite kvasac, mlaku vodu, secer, ulje. Malo  izmesajte rukom, dodajte brasna ali ne sve, malo vise od pola od ukupne kolicine. So dodate tek sad, ne direkt u kvasac slabije ce narasti.
Uzmite mikser sa onim vijugavim zicama, debljim koje su i namenjene za mesenje guscih masa kao sto je testo.
Tako cete brze napraviti lepo glatko testo sa baloncicima. Rukom bi morali mnogo duze da mesite i zamarate se. Mutite mikserom sve dok se ne dobije lepa glatka masa, bez grudvica. Ostavite mikser, vise vam ne treba.
Pobrasnjavite malo ruke i testo. Mesite blago i povrsno, tek da se formira mekana lopta od testa. Ako se bas jako lepi za ruke, dodajte jos malo brasna i blago mesite.

Zagrejte rernu. Ukljucite na 50 C, al ne cekajte da se skroz zagreje, pa ugasite. Rerna treba da je mlaka, ni slucajno vruca. Ubacite vanglu sa testom, i prekrite krpom. Zatvorite rernu i ako  se plasite da ste pregrejali rernu otvorite je na kip (do pola). Neka stoji 15 minuta da testo  naraste, nema potrebe da se digne skroz. Ja sam pre ostavljala da se testo digne do kraja vangle, al mi mekike budu skroz iste i ovako i onako.

Pobrasnjavite dobro radnu povrsinu, testo blago premesite sa malo brasna. Istresite na sto,  oblikujte  u loptu i oklagijom razvaljajte. Ne previse tanko i ne pritiskajte jako oklagijom da se rupice u testu ne slepe i ne izadje vazduh.

Sada je bitno ostaviti da odstoji oko 20-25 minuta (zavisi koliko je toplo u prostoriji). Mekike fino narastu, supljikavost se poveca. Zagrejte ulje, vrhove prstiju svaki put umocite u brasno da vam se mekike ne zalepe. Bitno je jos da ih uzimate veoma blago, ne pritiskajuci jer ce se spljostiti i nestace pola rupica iz njih. Spustajte u vrelo ulje, gornje strana ide prvo dole. Kada dobro porumeni, okrenete drugu stranu da porumeni. Vadite na salvet da se ocede.

Eto tako ja pravim mekikice. Posluzim uz jogurt, kajmak, kecap, dzem, med ili napravim neki sos (ne kuva se). Beli luk iseckam u pavlaku, malo majoneza... ide bas fino uz mekike. Prijatno i uzivajte! :)

  1. Mekike su ti Ivana predivne,ja kad ih pravim (stavim sve isto kao i ti )jedino dodam i 1kesicu praška za pecivo.Kada dodam i pecivo mekike ne upiju uopšte masnoću i veoma su mekane... ;)

    1. E da znam,sledeci put cu i ja staviti malo praska za pecivo.Cula sam da neke domacice stavljaju i sasvim malo rakije u testo.Tada isto ne budu masne. :)

  6. Opet ne kompletno objasnjenje,u popisu namirnica stoji i 5 kasika ulja za testo,nigde se posle ne spominje gde se i kada ubacuje.Ja licno znam ali za citaoce je vazno da i oni znaju.
